My rice bowl phase

I tend to go through serious phases with food. Not just fleeting obsessions that last for a week, but long phases that can stretch on for years.

When I was a kid, it was potatoes. I begged my dad to make his leek and potato soup all the time, and if I couldn't have that, I wanted baked potatoes. My parents always joked that I must have a lot of Irish in me.


When I was a teenager, it was sandwiches. Without fail, I packed a turkey sandwich for lunch every day. And when we went to eat out at restaurants, you can bet I got a sandwich. I still remember my favourite: it was the Mediterranean chicken focaccia sandwich with goat cheese, spinach, and aioli from Jack Astor's. I must have ordered that sandwich at least 10 times.


These days, it's rice bowls. I have come to believe that everything tastes better over rice: stir fries, tacos filling, sushi filling, you name it. Even if you just take your average dinner with chicken, rice and broccoli and throw it in a bowl together with sauce, I think it tastes so much better than if it were eaten on a plate!

These are three of my current rice bowl obsessions:

1.The burrito bowl


The layers:

a. Brown rice
b. Black beans simmered with onions, cumin and chili powder
c. Chopped tomato
d. Shredded romaine lettuce
e. Sour cream or 2% Greek yogurt
f. Guacamole

2.  The stir fry


The layers:

a. Brown rice
b. Vegetables (onion, broccoli, carrots, sweet peppers, kale) stir fried in canola oil
c. Tempeh marinated in sesame oil, soy sauce and rice wine vinegar then pan fried
d. Sunbutter sauce

3. The Buddha bowl

Hi everyone! So I'm officially moved back home, but I'm already packing again for a trip to Halifax tomorrow. My mom and I are flying out to pick up my sister and then drive back home with her car - and we'll be making lots of planned restaurant stops along the way. We actually did a similar trip along a different route last year - check out my recap posts if you're interested!

So while I'm running around doing some last minute packing and heading off to the airport, I'll leave you with this What I Ate Wednesday post featuring yesterday's meals and snacks:

Oatmeal cooked with chia seeds, cinnamon and banana then topped with banana, blueberries, blackberries and a big scoop of crunchy Barney Butter.


Leftover brown rice with kale massaged with avocado and lemon juice, cucumber, carrot, marinated tofu, avocado, hemp seeds, and a sesame soy dressing.


A peach kombucha while I was out running errands.


A bowl of the trail mix I made for our trip - because no road trip is complete without trail mix! This one was made with Kashi Cinnamon Harvest cereal, banana chips, almonds, roasted soy beans, raisins, and The Good Bean cinnamon roasted chickpeas.


A lighter dinner after eating way too much trail mix: barbequed strip loin steak, roasted sweet potatoes, and a spinach salad with blue cheese, toasted pine nuts, tomatoes, and balsamic dressing.


Oikos 2% vanilla Greek yogurt (my absolute favourite!) with President's Choice chocolate granola before bed

Weekly Meal Plan: April 13 - 19

Hi everyone! I can't believe I'm moving in 3 days! I'm not even close to ready for it - I still have so much packing to do. Also despite my efforts to eat up the contents of my fridge and freezer, they are still pretty full.

But I tried to plan my meals last week around using up all my food, which helped make a dent. Here's what I planned:

FOODS TO USE UP: Meatballs, cilantro, salmon, feta cheese, pancetta, Irish soda bread, edamame, corn, tortillas, marinara sauce

MEAL PLAN:

Saturday: Edamame soba noodle bowl with a homemade sesame soy stir fry sauce


Sunday: Meatballs with a BBQ sauce glaze, roasted sweet potatoes and broccoli


Monday: Salmon with lemon and parsley, grilled balsamic vegetables, and herb roasted potatoes


Tuesday: Pasta and meatballs with marinara sauce and veggies


Wednesday: "Cobb salad" with a hard boiled egg, pancetta, cherry tomatoes, avocado, and feta cheese over baby spinach with a lemon Dijon dressing and Irish soda bread on the side.


Thursday: Green goddess bowl from my Refresh cookbook with marinated tofu, steamed greens, brown rice, nori, a lemon tahini sauce, and toasted sunflower seeds.


Friday: Leftovers from Thursday.

GROCERY LIST: Bananas, apples, sweet peppers, zucchini, kale, spinach, cherry tomatoes, regular tomatoes, avocado, parsley, lemon, broccoli, large white potato, ginger, black beans, tofu, eggs, and milk.
